Easy BBQ Pulled Pork Nachos

If you’ve got leftover pulled pork or a slow-cooked bone-in pork roast, these BBQ Nachos will become your new favorite family meal. They’re easy, budget-friendly, and totally customizable — plus, they disappear fast around here!

This is one of our go-to recipes when we’ve cooked a pork roast low and slow all day. It's perfect for a busy night, a casual get-together, or a fun Friday dinner.

When I find a pork roast on sale, I take advantage. I cook it, then separate it into food saver bags and freeze it. It usually gives me 3 or 4 meals. This is one of my favorite meals to make with the pork. My family loves it and devours it in minutes.

Ingredients

  • 1 bone-in pork roast, cooked on low for 10 hours, then shredded, or 1 lb pulled pork

  • 1 bag of scoop-style tortilla chips

  • Your favorite BBQ sauce (I love Sweet Baby Ray’s Original)

  • 1–2 cups shredded cheddar cheese (I use mild cheddar) Check out this Rotary Cheese Grater, it's one of my favs!

  • 1/4 cup of diced jalapeños (optional but adds a nice kick)

  • Optional mix-ins: corn, diced onions, black beans, etc.

  • Toppings: lettuce, tomato, salsa, sour cream, avocado, etc.

Instructions

  1. Cook your pork roast low and slow (around 10 hours on low in the crockpot) until it’s fall-off-the-bone tender. Shred the meat using forks and remove any bones or excess fat.

  2. If you have previously cooked the pork and already had it separated and frozen, you'll need to have it thawed. Heat the pork on medium heat, add BBQ sauce and mix. You just want enough sauce to incorporate a good flavor. Don't saturate because you'll be adding more BBQ sauce later.

  3. Preheat your oven to 350°F.

  4. On a large baking sheet or oven-safe dish, spread scoop tortilla chips in a single layer.

  5. Add the shredded pork evenly across the chips.

  6. Drizzle with BBQ sauce — as much or as little as you like.

  7. Sprinkle shredded cheddar cheese all over. If you love it cheesy, add more!

  8. Top with diced jalapeños or any other favorite mix-ins like corn or onions.

  9. Bake at 350°F for about 10–12 minutes, or until the cheese is melted and bubbly.

  10. Remove from oven and top with your favorite nacho toppings like:

    • Shredded lettuce

    • Diced tomatoes

    • Salsa or pico de gallo

    • Sour cream

    • Chopped green onions

    • Avocado or guacamole

Tips & Variations

  • Make it spicy: Add hot sauce, chipotle BBQ, or fresh jalapeños.

  • Go Tex-Mex: Add black beans, corn, and taco seasoning to the pork.

  • Kid-friendly: Keep the jalapeños off one half and let the kids add toppings they love.
